Left over rice is great to have on hand for stirring into soups and broths and for making fried rice — it's perhaps the world's best vehicle for turning leftovers into something fresh and new.

For starters, eating seasonally! Your body will much prefer foods suited to the season. Swap summery-type salads and super light meals for a little more heat and substance. Increase your intake of low-fat, fiber-rich foods such as root vegetables, grains and legumes.
