Mincing Anchovies

Anchovies often stick to the side of a chef's knife, making it hard to cut them into small bits.Here's are two better ways to mince anchovies. 1.Use a dinner fork to mash delicate anchovy fillets into a paste.Mash the fillets on a small plate to catch any oil the anchovies give off. 2.A garlic press will turn anchioves into a fine puree.This method is especially handy when you have already dirtied the press with garlic.
