Dill (Anetheum graveolens), a member of the Umbelliferae (carrot) family is an annual herb native to the Central Asia; it is also widely grown in Europe and Northern Africa for its culinary and medicinal use. The leaves, seeds and oil of this plant are used for their medicinal and culinary value. Fresh and dried dill leaves (sometimes called "dill weed”) are used as herbs, mainly in the Baltic and central Asia. Dill weed or dried leaves is also used for flavoring.
Appearance:
Dill plant has a smooth surface, finely dissected leaves, small yellow flowers and elliptic, flattened fruits. It reaches up to a height of 1 meter at maturity. The plant usually consists of a single hollow stem. Baby dill's are loose and immature; feathery-soft yellow-green leaves are thin and wispy.
Dill seeds are brown, flat, and oval-shaped. They are 4–5 mm long and 1 mm thick, and straight to slightly curve with a longitudinally ridged surface. Dill seed contains more oil than dill weed and the seed oil is greasier and stronger tasting than dill weed oil. The seeds are available as whole or in a grinded form. The flowers are white to yellow, small and 2-9 cm in diameter.
Flavor and aroma:
Dill weed is herb-like and dill seed is spice-like; the seeds have a stronger flavor than the weed. It is milder in taste when compared to dill seed. Baby dill is very aromatic. This delicate baby herb offers a mildly sweet licorice-like flavor that combines anise, celery and parsley.Fresh dill leaves are sweetly pungent and sharp tasting.
The dill grows in the wild along the coastal Mediterranean region and probably originated from this area. Dill is also found growing in the wild in open range land in some parts of southern Russia, as well as in southern and central Asia. These days, dill is cultivated in many countries for use as a culinary herb most of this cultivation occurs in England and Germany and in the North American countries. Principal dill production areas are India and Pakistan, but Egypt, Fiji, Mexico, the Netherlands, the United States, England, Hungary, Germany, and Holland also have commercially productive areas.
Season of availability: Dill is available year round in all forms.

Scratch Removal from Porcelain Sink-
General kitchen cleaning or even washing dishes on a regular basis can cause a porcelain sink to incur scratches. A pumice stone, available at most hardware stores, should remove surface scratches from your porcelain sink. Fill the sink with water, then scour the scratches with the wet pumice stone to smooth them and clean the porcelain. However, it will not help with deep scratches. The pumice stone should be soaking wet or it may scratch the porcelain, too.
