Baking powder will lose its leavening ability with time.If the can is not marked with an expiration date , we suggest writing the date the can was opened on a piece of tape.Affix the tape to the bottom of the can.After six months, baking powder will begin to weaken , and after a year it should be discarded.If you have any doubts about the strength of your baking powder , use this test.Mix 2 teaspoons of baking powder with 1 cup of hot tap water.If there's an immediate reaction of fizzing and foaming(right), the baking powder can be used.If the reaction is at all delayed or weak (left), throw the baking powder away and buy a fresh can.
