Making a Bouquet Garni for Herbs

A bouquet garni is a classic French combination of herbs and spices used to flavor soups, stocks, and stews.Traditional recipes call for wrapping the herbs and spices in cheesecloth for easy removal before serving. A coffee filter, which most modern cooks are more likely to have on hand, can be used in place of the cheesecloth. 1.Place the herbs (usually bay leaves and thyme, either dried or fresh, and fresh parsley) and spices(usually black peppercorns) into the coffee filter. 2.Tie the end of the coffee filter closed, catching the stems of the herbs as you do so. 3.Tie the other end of the handle of the pot or pan so you can easily retrieve the bouquet garni once the herbs and spices have given up their flavor.
